LEMON MERINGUE PIE

1 1/4 CUP SUGAR
2 TABLESPOON CORN STRACH
1 CUP BOILING WATER
1 LEMON-JUICE AND RIND
3 EGGS
1 TABLESPOON BUTTER
PINCH OF SALT
MIX SUGAR, CORN STRACH, AND SALT
ADD BOILING WATER
BOIL 10 MINUTES
STIRRING CONSTANTLY
TAKE FROM STOVE
ADD BUTTER, BEATEN EGG YOLK, JUICE, AND GRATED RIND OF LEMON AND POUR INTO BAKED PIE CRUST
BAKE UNTIL MERINGUE IS BROWN IN MODERATE OVEN
TO MAKE MERINGUE
ADD 3 TABELSPOON SUGAR TO 3 EGG WHITES AND BEAT UNTIL THEY WILL NOT SLIP FROM THE DISH WHEN INVERTED
CAREFULLY FOLD IN 3 MORE TABLESPOONS OF SUGAR
POUR OVER THE PIE FILLING AND BROWN IN MODERATE OVEN
